Ingredients for Sweet & Sour Cabbage Soup
3 lb Chuck Roast (with bone if possible)
9 cups Water
2 lb head Cabbage, shredded
1½ cups Onion, diced
3-4 Carrots, sliced
2 stalks Celery, diced
2 16 oz. Cans Tomatoes
8 Gingersnaps
1 tsp Salt
½ tsp Celery Salt
½ tsp Dill weed
Pepper, freshly ground to taste
½ cup White Sugar
¼ cup Light Brown Sugar
1 tsp Sour Salt (citric acid)
Method for Sweet & Sour Cabbage Soup
In large soup pot combine chuck roast and water and bring to a boil. Simmer for ½ hour. Skim water.
Add cabbage, onion, carrots, celery, tomatoes, gingersnaps and all seasonings except sugars and sour salt. Bring to a boil. Lower heat and simmer 3-4 hours.
Pull out chuck roast and set aside to cool.
Add sugars and sour salt to soup pot. Cook over medium heat for 15 minutes. Taste and adjust seasoning as desired.
Cut meat into bite-sized pieces and put back into soup pot.
